Cod with Mint & Pepper Salsa

In our backyard we have a mini garden planted. We are growing tomatoes, cucumbers, red peppers, and jalapenos. I also have a small herb garden with cilantro, basil, and mint (I bought a nice mint plant the day before I discovered it's growing wild). I am so excited to use my garden's harvest in recipes all summer. Don't get too excited yet. My garden is still in the beginning stages, so the peppers in this recipe are not homegrown. But, as soon as I have some peppers, I'll be grabbing some mint out of the backyard and throwing this delicious recipe together again!

Peppermint Patties

Everyone has a favorite candy, right? You might be a Kit Kat girl or an Almond Joy guy. Me? I am a York Peppermint Patty girl. You’ve probably heard this rule of thumb – never go to the grocery store hungry. You know why that is, right? It’s because if you go to the grocery store hungry you are going to pick up your favorite candy bar on while waiting in the checkout line. The cashier will say “do you want this with you”, you will say “yes, thank you”, you will load the groceries into the car, and then you will eat said candy bar on your way home. I’m not speaking from experience, I’m just telling you what a friend told me.

Grilled Chicken Drum Sticks

In Ohio, grilling season is here! In our neighborhood, nearly every night, we can smell the grills cooking delicious food. Once summer really hits, say, mid-July, I almost refuse to turn my oven on and will only grill foods. That was actually embedded into my head from a young age. I grew up with no central air, just a single window air conditioner. So, there was no way in h-e-double hockey sticks my mom was going to turn the oven on in the July heat. I still stick to that same principle today.

Seared Tuna Over Barley Mint Salad

Just last week, my husband and I were doing some yard work. We've only been in our house for a year, so this is only the second big overhaul we have done to our yard. As we were chopping away branches of shrubs and trees, we looked over and saw a huge amount of weeds and flowers. Well, we thought they were weeds. It rurns out that we have a huge amount of mint growing in our backyard. Massive. Of course, as soon as I discovered this, I started using mint left and right.
