Chocolate Chia Pudding

There are two types of people in this world. Those who love sweets and those who could get by without them. I am the first type--I need them. My husband is the second type, he could live without them, and, he regularly passes them up. I don't understand him or how he does it, and sometimes I envy him for this. If there is a sweet treat in the house, you better believe I will find it and I will eat it. Hence the reason I don't buy ice cream. We only go out for ice cream, never stay in and eat ice cream.

Mediterranean Chicken

My husband and I love Mediterranean food. We are suckers for feta and olives. If you add either of those to any dish, it is likely that we will like it. We will be traveling to the Mediterranean this fall and are most excited to try the food. We might even do a food and wine tour (more on that later), we will keep you all posted if we do.

Easy Like A Sunday Morning

There are few things that rival my love for banana pancakes on a Sunday morning. Unfortunately, my Sunday mornings are by no means a lazy Sunday morning. In fact, since I usually work on Saturday, my Sundays are jammed packed with things to do; but I always try to start it with a good workout and warm pancakes. I have always had a few tried and true pancake recipes but I think I have finally landed on a favorite.

Sauteed Pork Tenderloin

As a dietitian I get my fair share of random, food & nutrition related mail. This past week The Pork Council sent me a newsletter than contained a few recipes and some really great information. I am always looking for new lean protein recipes for my husband, so a pork tenderloin recipe caught my attention. The original recipe (found here) was not considered low FODMAP; so with a few little tweaks I was able to make it fit the diet.
