Coffee Smoothie

Paging all coffee addicts. Can I have you attention please?

I love all things coffee flavored. This includes, but is not limited to, my morning cup of coffee, coffee yogurt, coffee scented candles, and now, coffee smoothies. One thing to remember with smoothies, regardless of if they contain coffee, is that you can only use them as a meal if they contain a good source of most of the food groups. With that being said, this smoothie recipe contains the grain, fruit, and dairy group. It only contains a small amount of protein, so I would recommend pairing this with a hard boiled egg if you are using it as a breakfast.

Egg Roll Bowl

This is one of my new go-to recipes. It’s quick, it’s easy, it’s budget friendly. Move over salmon fried quinoa!

This recipe features…cabbage! I know, you probably can’t believe that cabbage is low FODMAP. But luckily, Monash University gave it the green light; so here we are. Please note: Common cabbage has the green light, not savoy cabbage! There is a difference. Cabbage is an awesome vegetable because it’s in the cruciferous  family. Some research indicates that just 3 servings of cruciferous vegetables can lower you risk of certain types of cancer (read more here). Cruciferous vegetables are full of cancer-fighting phytochemicals, specifically beta-carotene and lutein!

The American Heart Association recommends that those with coronary artery disease should consume 1000 mg of EPA+DHA per day. Also, the 2010 Dietary Guidelines for Americans suggest that all of us (regardless of our heart health) should eat variety of seafood twice per week, 8 ounces or more. Did you know that the average American only get 3 ½ ounce of seafood per week?

Peanut Butter Quinoa Blondies

My birthday was yesterday. I've turned another year older. I decided what better way to celebrate my birthday than by eating dessert (all day). Because, really, how else do you celebrate another year of life?

I have always loved blondies, In fact, I like them more than brownies because I like chocolate...but not too much chocolate. In fact, when I was little, my grandma used to make me chocolate chip cookies but she would leave the chocolate chips out. I just wasn't a big fan of chocolate back then. THANK GOODNESS things have changed and now love chocolate. But, still, I can only handle a certain amount of it before I am in chocolate overload.

Beet & Arugula Salad

A few years ago, my husband and I went to Ireland. We of course kissed the Blarney Stone, visited the Jameson Distillery, and the Guinness Store House; we did all things touristy. But, we also ate...and we ate a lot. I found that Ireland had the best soups and salads I'd ever had. Of course, their Irish soda bread was out of this world, too. 

One day, after a tour of the Jameson Distillery and before we headed over to the Guinness factory, we decided it would be a good idea to get some food in our stomaches. We stopped by a little restaurant and I ordered the beet, goat cheese & rocket salad. I know. Rocket. Don't worry; I didn't know what it was either, but I ordered it anyway.
