Chicken & Salmon Fritatta

Frittatas are easily one of my favorite “I-have-no-idea-what-to-make for-dinner” dinners. They are my favorite because I can literally throw random leftovers into the mix and end up with a delicious dish. 

As you may already know, I am a lacto-ovo-pescatarian and my husband follows the straight up carnivore diet (paleo, if you want to get technical). This recipe was developed using leftovers in our fridge. It was a Thursday evening, post-workout, and we needed food, stat.

Buon Appetito

I am Italian, so it was almost a cardinal sin for me to create this recipe. How is it possible to make a spaghetti sauce without garlic and onion? How can you even call something like that SAUCE? But, I did it. I pulled it off, and it is totally delicious. It probably wouldn't be able to fool my grandparents, but for a low FODMAP sauce it tastes as close to an Italian spaghetti sauce as you are ever going to get. When selecting a tomato puree and can of diced tomatoes, make sure there are no added onion and garlic. It is actually really easy to find--just steer clear of fire roasted or Italian seasoned tomatoes.

Homemade Nut Milk

This past weekend I finally decided to try to make my own almond milk. Each week I  buy myself a half gallon of almond milk; I just love it. I use it in cooking, in my coffee, and just to drink with dinner. But, as you've heard me talk about it before, I loathe long ingredient lists on my food. The almond milk I was buying had 10 ingredients. Some of those ingredients are thickeners and stabilizers. The third ingredient (after almonds and water) is evaporated cane sugar. So, I decided to give homemade nut milk a try. And why only test making almond milk when I can test almond, pecan, and walnut!

Zucchini Sloppy Joe Boats

When I was little, sloppy joes were my jam. I was a messy kid to begin with, so hand me a sloppy joe and I was in heaven. Apparently, my husband loved sloppy joes as a kid, too. But he recently told me that he liked them "not as sloppy". Like, what does that even mean? Enter this recipe. Although this recipe is still sloppy on the plate, you use a fork and knife so you get less messy. Win-win, right?

Overnight Carrot Cake Oats

Some days I am really busy with life. Like really busy. But, I still make eating breakfast a priority. It's a priority mostly because if I don't eat breakfast I get hangry (an amalgam of hungry & angry) and everyone I encounter knows it. I can grab a mason jar out of the refrigerator, pop it in the microwave for 60 seconds and voilà, breakfast is done!
